DESCRIPTION:

A different taco that's lighter. Made with veggies instead of meat.

INGREDIENTS:

4 cups sliced fresh vegetables, such as red peppers, zucchini, onion and whole kernel corn
1 pkg. (16.33 oz.) TACO BELL HOME ORIGINALS Soft Taco Dinner
1 can (16 oz.) TACO BELL HOME ORIGINALS Refried Beans
10 TACO BELL HOME ORIGINALS Taco Shells
KRAFT Shredded Cheddar Cheese
BREAKSTONE'S or KNUDSEN Sour Cream
Chopped tomato and lettuce

DIRECTIONS:

Spray skillet with no stick cooking spray. Add vegetables; cook and stir 2 minutes. Add Seasoning Mix; prepare as directed on package. Spread each warm Soft Tortilla with 2 Tbsp. beans. Place crisp taco shell on beans; fold soft tortilla over taco shell. Fill each crisp taco shell with seasoned vegetables. Top with cheese, sour cream, tomato, lettuce and Taco Sauce.
